Beans and Bows Soup

What is it? It's a Pomegranate.

Cooler Weather Ahead! Here is a quick soup to make for lunch or dinner. Serve with hearty bread.

Beans and Bows Soup

Serves 6

2 tsp. olive oil

2 cloves garlic, minced

1 medium onion, chopped

1 carrot, diced

1 stalk celery, diced

2 cups diced or crushed tomatoes

3 1/2 cups beef or vegetable broth

1 tsp. dried basil

1/2 tsp. diced oregano

1 15 oz. can red kidney beans, rinsed and drained

1 15 oz. can cannellini beans, rinsed and drained

1/2 cup farfalle (bow tie) pasta

3 Tbs. grated Parmesan cheese


Heat oil in a large pot. Sauté garlic, onion, carrot and celery for 5 minutes. Add tomatoes, broth, basil, oregano, and 2 cups of beans. Mash remaining beans and add to pot.

Simmer 15 minutes, stirring occasionally. Add pasta and simmer 8 more minutes. Stir in cheese.

One medium fruit has only 105 calories and is a good source of vitamin C and potassium, as well as potentially cancer-fighting phytosterols.
Slice the skin into four equal parts. Pry pomegranate open. Use caution as the juice stains.
