Brussels Sprouts

Choose firm compact sprouts with bright green color.
Wash well under running water.
Member of the cabbage family; always eaten cooked.
A small "X" cut into the stem will speed cooking time of these "baby cabbages."

Sprouts in Pecan Butter

1 lb. Brussels sprouts, trimmed

2 Tbs. butter

1/4 cup coarsely chopped pecans

Salt and pepper


Cook Brussels sprouts in boiling salted water, covered, about 10 minutes. Drain and keep warm. Heat butter in a small saucepan. Add pecans and cook until lightly browned. Pour over sprouts, season with salt and pepper, to taste.
