Tortellini with Fresh Tomato and
Pine Nuts
1/4 cup extra virgin olive oil, divided
3 garlic cloves, peeled and thinly sliced
1/2 cup pine nuts
6 large organic tomatoes, diced
Handful chopped parsley
Salt and pepper, to taste
18 oz. frozen tortellini
Freshly grated Parmesan cheese
Heat 2 tablespoons of the olive oil in a large skillet over medium
heat. Add garlic and pine nuts and sauté until golden. Remove
skillet from heat, and allow contents to cool. In a bowl, combine
tomatoes, parsley, salt, pepper, and remaining olive oil. Add cooled
oil, garlic, and pine nuts. Cover and refrigerate at least one hour.
Cook tortellini according to package directions. Drain well. Combine
hot pasta with the tomato mixture in a large, shallow bowl. Serve
with Parmesan cheese.
