Fresh Orange Yield:


Herbed Lemon Butter for Vegetables

Makes about 1/3 cup

1/4 cup butter

1 Tbs. chopped fresh parsley

1 tsp. chopped fresh herbs such as: oregano, thyme, basil, dill, etc.

Grated rind of one lemon

Juice of 1 lemon


In a small saucepan over low heat, melt butter. Add remaining ingredients. Serve over cooked vegetables.

6 medium lemons....1 cup juice
1 medium lemon.....3 Tbs. juice
1 medium lemon.....3 tsp. grated peel

Orange Yogurt Dip

Makes 1 cup

8 oz. lowfat plain yogurt

2 Tbs. honey

Grated peel of half an orange

2 navel oranges, peeled

Apple slices

Banana slices


In a small bowl, combine yogurt, honey, and orange peel. Serve as a dip with fresh fruit.

1 medium orange....4 tsp. grated peel
