Go Nuts, Go Healthy

Nuts are full of important nutrients, including protein and fiber
Source of vitamins and minerals
Most of the fat in nuts is unsaturated
Toss them into stir fries, salads, and pasta dishes instead of meat
Sprinkle them on top of a bowl of soup, vegetable dish, or your favorite casserole
Start your day with a few nuts sprinkled on yogurt or cereal
Add nuts to a cheese platter as an appetizer or a special dessert

Tips for Toasting
For extra flavor, spread raw, shelled nuts in a single layer on a baking sheet, and bake 5 -8 minutes at 350 degrees F. Stir nuts once or twice. Nuts will continue to brown slightly after removing them from the oven.

Festive Holiday Salad

Serves 4

6 Tbs. orange juice

1 Tbs. balsamic vinegar

1 tsp. Dijon mustard

1 clove garlic, minced

Salt and freshly ground pepper, to taste

4 cups mixed salad greens

1/2 cup toasted mixed nuts (almonds, pistachios, cashews, walnuts, pecan halves, peanuts

1 apple, cored and thinly sliced

1 pear, cored and thinly sliced

1/2 cup raisins

1/4 cup crumbled Stilton


In a medium bowl, whisk together juice, vinegar, mustard, salt, and pepper. Add greens and toss to coat. Divide salad among 4 plates. Sprinkle nuts, apples, pears, raisins, and Stilton over each salad. Serve immediately.

Magic Cookie Bars

1/2 cup margarine or butter

1-1/2 cups graham cracker crumbs

1 (14 oz.) can sweetened condensed milk (not evaporated milk)

1 (6 oz.) pkg. semi-sweet chocolate morsels

1-1/3 cups flaked coconut

1 cup chopped nuts


Preheat oven to 350 degrees F. (325 degrees for glass dish) In a 13 x 9-inch baking pan, melt margarine or butter in oven. Sprinkle cracker crumbs over margarine; mix together and press into pan. Pour sweetened condensed milk evenly over crumbs. Top evenly with remaining ingredients; press down firmly. Bake 25 to 30 minutes or until lightly browned. Cool thoroughly before cutting. Store loosely covered at room temperature.
