of Garlic
Phyllo Cups
with Cream and Fruit
Chicken with 40 Cloves of Garlic
Serves 4-5
A real garlic-lover's dish, your house will be filled with a wonderful
aroma! When you serve the dish, give a few cloves to each person.
They can squeeze the softened garlic onto toasted bread.
1 roasting chicken
1/4 cup olive oil
Salt and freshly ground pepper
1 Tbs. chopped fresh rosemary
1 Tbs. chopped fresh parsley
40 cloves garlic, unpeeled (about 3 heads)
Preheat oven to 350 degrees F. Brush the chicken with olive oil.
Rub the chicken all over with salt and pepper. Sprinkle with herbs.
Place half the garlic cloves inside the chicken. Put the chicken
in a casserole dish. Put in the remaining garlic cloves. Cover and
bake for one hour and 15 minutes. Remove cover and bake 15 minutes
more.

Phyllo Cups with
Cream and Fruit
Makes 12
4 sheets phyllo (fillo) dough, thawed and covered with a damp towel
1/4 cup melted butter
1/3 cup heavy cream
1/3 cup sour cream
2 Tbs. sugar
1/4 tsp. vanilla
3 cups fresh or frozen berries
Preheat oven to 325 degrees F. Lightly coat muffin tins with nonstick
vegetable spray or oil.
Working quickly, lightly coat a sheet of phyllo with melted butter.
Place a sheet of dough on top. Lightly coat with butter. Repeat
with two more sheets of dough. Cut into 12 squares. Press each square
into the muffin tin, pressing down on the bottom and sides. Bake
until crisp, about 7 to 10 minutes (be careful not to burn them).
Let cool in the tins before removing. Place each "cup"
on a plate.
In a small bowl whip cream, sour cream, sugar, and vanilla until
almost stiff. Spoon into phyllo cups. Top with berries. Serve immediately.
