Veggie Casserole

Veggie Casserole from Mom!
Want your kids to try some vegetables? Try this casserole and see
what happens. You can vary the veggies if you like.
1 pkg. frozen brussels sprouts (or 1 pint fresh)
1 pkg. frozen broccoli spears
1 small head cauliflower, broken into florets
1 8 oz. can mushrooms, drained
1 cup grated sharp cheddar
1/4 cup sliced stuffed green olives
2 cans Cream of Mushroom soup
1-1/2 cups skim milk
Cook vegetables in separate pans of boiling water until crisp tender.
Drain. Butter a 9x13-inch casserole. Preheat oven to 350 degrees
F. Cut sprouts in half and place in bottom of casserole. Cut up
broccoli spears and add to casserole. Add cauliflower florets. Sprinkle
with mushrooms, cheese, and olives. In a bowl, combine soup and
milk. Pour over casserole. Bake one hour.

Rosina's Meatballs, Muir Glen Organic Pasta Sauce, and Mueller's
spaghetti. Add a salad of red and green lettuce, red, yellow, and
orange peppers dressed with Extra Virgin Olive Oil and lemon juice.
Serve with a crusty loaf of bread.
