Makes

cup flour

tsp. salt

cup flavored yogurt
1/2
cup low-fat milk
1
egg
1
Tbs. butter, melted
In
a medium-size bowl, combine flour, salt, and baking powder. In a
small bowl combine yogurt, milk, and melted butter. Crack egg into
a cup, then add to yogurt mixture. Whisk until egg disappears. Pour
the wet mixture into the dry, and mix together. Pour batter onto
a hot skillet in pancake shapes. Cook for about 5-8 minutes on one
side, then flip over with a spatula and cook the other side. Serve
hot with your choice of favorite toppings.

Blueberry
Bran Muffins
Makes
12 muffins

cups flour
3/4
cup oat bran or wheat bran
1/3
cup sugar

tsp. baking soda

tsp. baking powder
1
cup vanilla or lemon yogurt
2
egg whites
1
tsp. vanilla
1
cup fresh or frozen blueberries
Preheat
oven to 350 degrees F. Lightly coat a muffin tin with nonstick cooking
spray. Combine dry ingredients in a medium-sized bowl. Add yogurt,
egg whites, and vanilla, stir until dry ingredients are just moistened.
Fold in the blueberries. Fill muffin cups 3/4 full with batter.
Bake 16-18 minutes. Let muffins cool five minutes before removing
from pan.

Krispy Rice Pie
Serves

1/3
cup corn syrup
1/2
cup creamy peanut butter, room temperature
2
cups crispy rice cereal
1
quart nonfat frozen yogurt, softened
Sliced
fresh fruit or chocolate syrup (optional)
Mix
corn syrup, peanut butter, and cereal together. Press into a 9-inch
pie pan. Spoon frozen yogurt onto the cereal crust. Freeze. Cut
into slices. If desired, top with fruit or chocolate syrup before
serving.
