Cover crops, such as the buckwheat shown here, are also called
green manure. Through their deep root systems, cover crops
drawn up nutrients stored in the lower levels of the soil.
These valuable nutrients are released when the cover crop
is tilled into the soil. Cover crops also protect the soil
from erosion.
